Fragrant Burmese curry

Ingredients:

  • 1 1/2 teaspoons olive oil
  • 1/4 teaspoon crushed red pepper
  • 1 Tablespoon minced garlic
  • 1 1/2 Tablespoons fresh grated gingerroot
  • 1 large shallot, minced (about 1/3 cup)
  • 1 large red onion, chopped
  • 1/3 cup chopped red pepper
  • 3 cups diced potatoes, peeled
  • 2 (6 ounce packages) Soy ‘chicken strips’ or seitan
  • 1 (15-ounce can) garbanzo beans
  • 1 medium tomato, diced
  • 1/2 teaspoon turmeric,
  • 1 teaspoon ground ginger
  • 2 cinnamon sticks
  • 1/2 cup vegetarian broth
  • 1 (14-ounce can) lite coconut milk
  • 1 Tablespoon tamari
