Guacamole

Ingredients
  • 2 ripe avocados

  • 6-7 medium tomatoes

  • 1/2 onion

  • juice of 1 lime

  • 1/2 tsp salt

  • 1/2 tsp fresh ground black pepper

  • several small leaves of cilantro or parsley

  • dash of cayenne pepper

Directions
  1. Cut the avocado in half lengthwise, and remove the seed.  Scoop out the avocado flesh with a spoon into a bowl and mash with a fork.

  2. Chop tomatoes and onion, and add to the mashed avocados.

  3. Mince the cilantro or parsley, and add to the bowl.

  4. Add the rest of the ingredients, and mix well.

  5. Enjoy with tortilla chips!

Cook’s Notes
  • How do you know if an avocado is ripe?  If you squeeze it gently, and it seems to give to your finger, then its good.  If it’s too soft, it’s probably no good.

  • The easiest way to remove the pit of an avocado is to stab a sharp knife into the seed, and try to wedge it out by twisting the knife.

  • Are your onions making you cry?  Try a slicing motion with your knives, rather than chopping.  Using a sharp knife will also help.  The reason you cry, is because the juice squirts out of the onion when you press with your knife.  If you slice with a sharp knife, it is less likely to squirt.
